The Historic Hotel St.Francis in Santa Fe, New Mexico

Just off the main square, the historic St. Francis hotel has recently been reno- vated. The 81 rooms have updated bed- ding, flat screen televisions and handcrafted wood furniture by local artisans inspired by the Palace of the Governors. Historic artwork is displayed throughout property. The minimalist white palette in the lobby pays homage to Santa Fe’s early Franciscan missionaries.
One of the new additions is the hot, spicy and fabulous restaurant Tabla de los Santos where Chef Estevan Garcia constructs artful and memorable tasting meals. Chef Garcia entered the monastery after high school and stayed four years. “When they found out I could cook, I quickly became their chef,” he recalls. “They had never seen cooking like mine.” Today, our prayers are answered as he creates southwestern food with a French influence. He comments on each item on his whimsical menu offering historical perspective.
